Miso Ramen

Miso ramen is a savory bowl of noodles in a misobased broth thats served with vegetables, meat, and other toppings. The broth is usually made with a combination of miso paste, dashi, and soy sauce, and it can be flavored with other ingredients like garlic, ginger, and chili pepper. Making miso ramen at home is surprisingly easy, and its a great way to use up everyday ingredients like vegetables, eggs, and beef.

Miso Ramen

You’ll need:

  • 2 to 3 clove garlic
  • 3 tablespoon miso paste (any should work)
  • 2 cups stock (we use chicken stock)
  • 1 cup dashi stock (we use dashi powder)
  • 2 tablespoon mirin
  • half of an onion
  • ramen noodles/soba/or whatever you have on hand
  • 120 gram of ground meat (we used beef)
 

For the toppings:

add or subtract the amounts to your personal preference. Any toppings will work as well (corn, bean sprouts, tofu, etc) below are the toppings that I used

  • 2 – 6 seaweed
  • 2 to 4 fish cake slice
  • protein of choice (thinly sliced beef)
  • 1 tablespoon chili crisp
  • 1 to 2 stalk green onions sliced
  • 1 egg
  • sesame seeds

Directions:

  1. heat up the seasme oil in a pot over medium heat, then add onion and garlic.
  2. Cook until fragrant then add your ground meat. Continue cooking until ground meat is cooked through.
  3. stir in miso paste until it is well mixed, then pour in the two stocks (dashi and chicken) and mirin.
  4. Mix for a second to blend all the flavors in then bring it down to a simmer
  5. As it simmer, scum and foam will appear at the top, you will want to skim it off
  6. after 10 to 15 mins, the soup is ready
 
For the noodles and topping
  1. Prepare your noodles by following the package instructions then place into a bowl
  2. Place all of your topping on top of the noodles, you can place it however you like
  3. Ladle in the miso broth into your bowl
  4. Enjoy!
