Tomatoes and Eggs Stir Fry

This delicious recipe is great for those who are not looking to spend a lot of time in the kitchen and is a great way to use up extra tomatoes.

Tomatoes and Eggs Stir Fry

You’ll need:

1 cup tomatoes
4 eggs
2-4 green onion
2-4 clove garlic
salt and pepper
cooking oil
Sauce Mixture
1 1/2 ketchup
1 tsp sugar
1/2 tsp salt
1/2 tsp cornstarch
1/2 ginger paste
4 tbsp. water
1/2 tsp sesame oil

Directions:

PREP

  1. Crack the eggs into a mixing bowl and add salt and pepper to taste
    Beat the eggs and seasoning together then set aside
  2. In another mixing bowl, combine ketchup, salt, sugar, ginger paste, corn starch, water and sesame oil
  3. Mix it all in to create a slurry then set aside
  4. In yet another bowl, dice the garlic
  5. Slice the green onions and cut the tomatoes in half or in smaller pieces if you have a larger tomato
  6. Set aside 

 

COOK

  1. Heat pan on medium heat and add cooking oil
  2. Once the oil is hot, add in the eggs
  3. Gently scramble the eggs until the eggs are cooked
  4. Remove eggs from the pan and set aside for later
  5. Using the same pan, add cooking oil and set to med heat
  6. Once the oil is heated add in the dice garlic, green onion, and tomatoes
  7. Stir fry until tomatoes are soften and fragrant
  8. Add in the cooked eggs and mix slightly
  9. Add in the sauce mixture and mix everything together
  10. Once mixed, let simmer for a minute
  11. Take off stove and it is now ready to be served! Enjoy!
